Kyle Bigelow is a 4th generation Idaho native who's worked in restaurants across the Northwest for over 20 years. After earning his college undergraduate degree, Kyle travelled to Japan to apprentice at a ramen shop where he learned the art of noodle making and extracting umami flavors. Kyle started Noodle Monster in 2016 as a way to bring fresh ramen noodles to the Treasure Valley while also giving back to community non-profits in the form of ramen popups.
