A James Beard Awards semifinalist for Best Chef: Mountain (2025), Cal Elliott is the visionary chef and restaurateur behind The Avery, Boise’s most talked-about boutique hotel and brasserie.

With a career spanning Michelin-starred kitchens and award-winning restaurants, Cal trained under some of New York’s most celebrated chefs at Gramercy Tavern, Blue Hill, and Verbena before making his mark as Executive Chef of Dressler, earning a Michelin star and a New York Times two-star review.

In Brooklyn, he helped define the borough’s dining scene with DuMont (home to Time Out’s Best Burger in NYC) and Rye, a Williamsburg institution that landed on the Michelin Guide’s Bib Gourmand list year after year. His signature Meatloaf Sandwich became a cult favorite, featured in cookbooks and on Best Thing I Ever Ate.

Since returning to Boise, Cal has transformed the city’s culinary landscape. He opened Little Pearl Oyster Bar, an East Coast-inspired bistro that quickly became a local gem, and in 2023, he launched The Avery, a 39-room boutique hotel and fine-dining brasserie housed in a restored 1910 landmark. The project has drawn national acclaim, with Condé Nast Traveler calling it a must-visit for its “upscale French classics” and The Wall Street Journal hailing it as “a key driver behind the buzz of Boise 2.0.”
